I skipped last week's meal planning as I was super busy leading up to my Mum's wedding at the weekend. But tomorrow is May and I'm back on track aiming for a really healthy month leading up to our holiday in less than 4 weeks time! Here's what we are eating this week... Monday: Veggie risotto
Tuesday: Baked eggs with bacon and spinach Wednesday: Slow cooked garlic and honey chicken with rice Thursday: Pesto pasta with chicken sausages and rocket Friday: Bulgur wheat Kedgeree with spinach Saturday: Make your own pizza night - using tortilla crusts Sunday: Roast Chicken with mash, red cabbage and Yorkshires

You have really inspired some of meals for next week. Definitely going to do a veggie risotto and Bulgur wheat Kedgeree with spinach. We use chicken sausages too. They're so much healthier than pork and really delicious. x
