We cannot wait for the summer because it means we can finally eat outside! Hurrah! We have the most amazing view from our garden so we try and eat outside whenever possible. One of my favourite recipes too cook when we have family and friends over relaxing in the garden is my Mini Tortilla Crust Pizzas. They are fab because they are so versatile; great on their own as bite size canapes, alongside other mini treats as a buffet or a quick dinner for the kids. You can prepare them before hand then bake when your guests arrive. They freeze well too (if you have any leftover that is - they all disappear in my house!). Last year we had an amazing book club meeting in my garden with lots of different varieties of these mini pizzas, including traditional Hawaiian, pesto and pine nuts, sweet chilli prawns and BBQ chicken. All washed down with a big jug of fruit filled Sangria! Happy memories. The kids love help making these pizzas so Little E is going to demonstrate how quick and easy they are to make... Mini Tortilla Crust Pizzas Ingredients Muffin tin Tortilla wrap Tomato pizza sauce (homemade or jarred) Grated cheese Toppings of your choice Italian herbs Firstly you cut circles from a tortilla using a cookie cutter or a tin can. Place the torilla circles into a muffin tin. Spread some tomato sauce across the tortilla (you can use pesto, sweet chilli sauce or BBQ sauce instead) Top with grated cheese and whatever toppings you fancy. Here we are using ham but I have used torn chicken and sweetcorn, gammon and pineapple, prawns, caramelised onions. The possibilities are endless... Shake over some Italian herbs and they are ready to cook (You can pop them in the fridge at this point if you are cooking later). Simply bake in the oven at 180 for about 10 minutes. When baked pop them out of the muffin tins and serve. Little E made these completely herself and she loved every second. She and her sister demolished them for dinner!
