Meal Planning Monday: February 2018 - Week 1

Last week we stuck to our weekly meal plan really well. We only changed one meal due to Husband's cold. I didn't fancy cooking just for me so had a quick risotto instead.

This weekend the kids and I are down at my Mum's so not much cooking for me this week - Hurrah!
Monday - Rosemary & red onion sausages with homemade Potato Rostis, brocolli, carrots, Yorkshire pudding and gravy (this is the meal we missed last week)

Tuesday - Slow Cooked Honey Garlic Chicken - Can't wait to try this new recipe.

Wednesday - Pointed peppers stuffed with couscous and bacon (This is a go to dinner for us at the moment as it is super healthy - I'll get the recipe up next week

Thursday - Chicken sausage with pesto bulgur wheat and spinach

Friday - Out at Bella Italia with friends (fab kids menu with free fizzy/still squash refills and kids eat free with Kidspass)

Saturday - Beef stew at Mums

Sunday - Toby Carvery for my cousins 21st Birthday! (Perfect for the kids as they can help themselves to loads of veg - how come they always eat more veg out that at home??)

I always forget to take meals out into account when I do the menu plan. We are nearly done for this week but tonight we have sweet potato and black bean burgers on the plan.

I love meal planning - makes such a difference to our budget. That being said I haven't stuck to this week's meal plan as work has been such a nightmare that I've barely been home to cook!

We just moved into our new house and still unpacking boxes so I have nothing planned as so but I fancy some frittata and pasta
