This week was the school cake sale and as we are pretty much packed to move house I needed a quick cake recipe I could knock up fast in one of the few baking trays I have left in the kitchen. I turned to a trusty friend; my Easy Banana Cake recipe and made a few adjustments to bake a delicious Banana and Choc Chip Tray Bake. This is a super easy recipe and you can mix it up quickly without worrying about being too precise with the ingredients. The quantities can scaled up really easily for batch baking. Ingredients 6 large very ripe bananas 2 eggs 2tsp bicarbonate of soda 1tsp baking powder 1tsp salt 400g plain flour 150g melted butter 300g caster sugar Method Preheat oven to 180. Line 12'' x 8'' deep baking tin Sift flour, bicarb, salt and baking powder together and set aside Add sugar, mashed banana, egg and melted butter together and mix well. Fold in the flour and half of the choc chips Pour into the tin and level. Sprinkle over the remaining choc chips. Bake for approx 30 - 40mins. I'm always forgetting about cake sale days at nursery so this sounds like the perfect last minute recipe for me - easy and we have all the ingredients in the cupboard already! I'm remembering this for the next time I get caught by surprise :)
