Easy Banana Muffin recipe

Banana muffins are one of my favourite kid friendly recipes because they are so easy to make. In the photos below Little E is making them just after her 3rd birthday. They freeze really well too so you can make a big batch and freeze them for later. Remember the riper the bananas the better the muffins!

Easy Banana Muffins

Makes 12 muffins
Prep time: 10 minutes
Cooking time: 25 minutes

Ingredients

3 large (or 4 medium) very ripe bananas

1 egg
1tsp bicarbonate of soda
1/2tsp baking powder
1/2tsp salt
200g plain flour
75g melted butter
159g caster sugar
Picture
Preheat oven to 180. Line muffin tin with 12 cases.

Sift flour, bicarb, salt and baking powder together and set aside

Add sugar, mashed banana, egg and melted butter together and mix well. Fold in the flour.

Divide between the 12 cases and bake for approx 25mins.

It is that simple. Enjoy!

These looks yummy, and super easy! The recipe I use is very similar, it just adds a little vanilla essence and olive oil to the mix :) But these look a lot easier so definitely going to try it out
