You won't believe it but last week we skipped the superfood salad again! We ate everything else though and the best meal was slow cooked lamb shanks in a red wine jus served with red cabbage and sweet potato mash. Epic! I'll pop the recipe up this week for you all. Now over to the forthcoming week. It is a bit of an odd one as we are trying to run down the freezer before holiday. It is also 3rd time lucky for the salad... Monday: Fish pie (freezer) with broccoli Tuesday: Superfood salad Wednesday: Salt and pepper roast chicken thighs with sweet potato wedges and veg Thursday: Homemade gourmet burgers Friday: Out with friends Saturday: Cod with roasted tomato sauce and roasted veg cous cous Sunday: BBQ (hopefully!) I miss lamb so much!! Americans just don't eat it, so it's prohibitively expensive. They do love their beef though, so I could probably sub it in. Your meals sounds just lovely. Clearing out the freezer is always a pain, though. Thank you for linking with #TwinklyTuesday.
