Despite the fact that I haven't braved the scales this morning, last week's meal plan went ok. We did substitute Friday night's dinner for a salad, but if you are gonna go off plan a salad is the way to go! This week leads up to the long Easter weekend. Which means a minefield of chocolate to negotiate. I'm hoping some careful planning will help keep the healthy eating on track. Here's what I have planned...
Monday - Bulgur Wheat Kedgeree with Spinach (This was the meal we swapped out last week)

Tuesday - Gammon, Sweet Potato mash and peas

Wednesday - Tuna and Cous Cous salad

Thursday - Pan fried cod with carrots and rice

Friday - Out with family for a pub lunch

Saturday - Porky Lights sausages and mash with braised red cabbage

Sunday - Easter Sunday roast at the in laws

What's on your menu over Easter?

Salad is the best way to go off plan....When we go off plan it's usually a takeaway. lol Good luck with the healthy eating over Easter.
I love the sound of the Tuna and Cous Cous salad...

It definitely has to be lamb for Easter! It wouldn't be Easter without a nice leg of lamb roast.

I think there always needs to be a degree of flexibility with meal plans because plans change for various reasons. I always try to factor in at least one meal that doesn’t rely on fresh ingredients so if we have to change plans, our food won’t go off.

oh that sounds like my kind of meal plan. We will be having lamb at the weekend but not sure if it will be as a dinner or with just fries etc.

I really wish I could get into weekly meal planning, I more inclined to decide on the day. i'm sure that if I meal planned, I would order less take away's on my lazy days.
