I have been thinking about going gluten free as since I had Covid I seem to have become intolorant to so many foods. So I have been on the lookout for some yummy gluten free recipes and this carrot, courgettes and ginger muffins recipe sounds perfect. Ingredients - serves 6 150 g self-raising gluten-free flour 2 tsp mixed spice 1 small courgette, grated 1 small carrot 3 pieces of Opies Stem Ginger in Syrup, diced and 3 tbsp reserved syrup 2 eggs, beaten (free range of course) 150 ml vegetable oil 75 g soft brown sugar 50 g chopped walnuts 50 g icing sugar Instructions
